Spicy sauteed prawns

Chef Le Thanh Tung from the Hanoi Daewoo Hotel said that prawns are in season, and you can buy them for reasonable prices at any market. Try this easy-to-make Chinese dish that equal parts sour and spicy, with a satisfying crunch and delightful colours.

Ingredients: Serves 6

·         300g tiger prawns

·         1 egg yolk

·         150g corn starch

·         minced garlic to taste

·         minced shallots to taste

·         a little minced spring onion

·         1 spoonful Sichuan chili sauce

·         seasoning powder, Chinese Hua Diao flavoured wine, sesame oil

Preparation:

·         Take off prawn shells, slash backs to remove intestines and clean prawn. Marinate prawns with seasoning powder, egg yolk and corn starch. Heat oil, sautee prawns and strain.

·         Pour a little oil into a hot pan and add minced garlic and shallots, then add chili sauce and a little Hua Diao. Pour 5 soupspoonfuls of water, season to taste and cook over low flame. Continue adding a little corn starch and pour prawns in. Add sesame oil while stirring quickly and then sprinkle with spring onion.
